The #6, Bacon Leek Goat cheese Pizza: goodeats

I make this pizza at least once a week.  It was originally inspired by a pizza I always get at Pizzeria Mozza (look out for a future post on that gem).  It's extremely easy to make yet looks and tastes very gourmet.  Ladies....this is the pizza you bust out when you want to subtly allude "Yes, I'm hot, successful and damned domesticated...now bring me my wine!" Fellas, this is the pizza that will make your girl swoon and think, "did he say goat cheese? goat cheese!? ...I love him...."
All in all, this is a home run recipe that I guarentee will have you and yours smacking your lips.  Introducing your new secret weapon... the #6.

#6 (bacon, leek, goat cheese pizza):

-2 stalks of leek
-Bacon
-Mozzarella cheese
-EVOO
-Goat Cheese
-Cloves of garlic cut in half
-corn meal pizza crusts (found at any Wholefoods)

Pre-heat your oven to 400 degrees.  Pre-heat your toaster oven to 350 degrees. Begin by cooking the bacon in a large, high walled skillet.  Meanwhile, thoroughly wash and roughly slice the leeks (I say rough because they will shrink down when they cook).  Put the halved garlic pieces into a oven safe bowl (or you can just make a makeshift foil bowl) and generously cover with olive oil.  Bake in the toaster oven for about 10 minutes until the garlic is bubbling.  After the bacon is cooked to your liking (I under cook mine slightly and they crisp up perfectly in the oven) transfer to a paper toweled plate to drain.  Take another paper towel and soak up excess grease from the pan, leaving enough to barely coat the bottom of the skillet.  Sautee the leeks in the bacon grease until they shrink down.  To prepare the crust, drizzle some olive oil on it then generously cover with mozzarella cheese (shredded or sliced, whatever you've got on hand).  Add on the sauteed leeks to the pizza.  Chop cooked bacon and sprinkle on top of the leeks along with the garlic chunks.  Top with goat cheese and season with some salt and pepper.  Bake for about 12-15 minutes or until top is golden brown. Voila! Mario Batali just got owned!

A few notes: The corn meal crust   from WholeFoods is ESSENTIAL.  Sure, you can be fancy and make your own dough, but I've found that this specific crust is perfect and makes your life much easier.  First of all, it's the perfect size.  Two come in a pack and are personal pizza sizes.  The crust also has this nice crunch and a very nutty flavor.  Also, I want to point out that yes, this pizza does not have a sauce.  No marinera, no pesto...if this bugs you, just consider the bacon grease the sauce ;)
